As a Notes Admin, are there any procedures one should follow on a daily basis when it comes to security? What sort of checks should be in place?

The one thing I would do every day is read the log file(s). If you are running just Notes clients, this would be just LOG.NSF. If you are also running as a web server (and have browser clients) then also read DOMLOG.NSF.

Skim the log events for the past 24 hours and look for anything unusual -- names you don't recognize, repeated failed attempts to do something, very long entries, garbage entries, etc.
