We are looking to change the administration server in our domain. Is there a quick and easy way to do this and are there any common gotchas?

No, it is pretty straightforward. Just make sure the change replicates to all servers. Also, make sure you put the certlog.nsf on the new admin server, and ensure all connection docs for names.nsf and admin4.nsf are going to all servers from the new admin server.
