Does a Web server always know incoming IPs?

OK Chuck here is one. On these free message boards that are everywhere... Is there a program that will allow us to view the IP address of a post when that feature is turned off? I ask because I have a couple of these boards attached to my sites and some of my customers want to know if their IP address is protected when the "display IP" is turned off.
Good question. I am going to have to punt on this one though, and ask if any other readers know the answer. This really has nothing to do with Domino, unless you are using Domino as the Web server for the message board. So the question is "can a Web server always see the IP address of incoming requests?". Anyone know?
