The menu Edit / Copy Selected as Table can give you a copy of all the data that appears in a view for selected documents. This is a way to get the basic information you need with no programming. If you need different data than what's displayed in the view, it's not too hard to create your own view.
If you can do a little programming, then a LotusScript agent could be used to directly create a To Do item whose contents are selected fields from the documents you select in the view. This isn't too hard to do; read the Designer documentation and take a stab at it yourself. NotesRichText item is the main class you'll need.
