Getting an "in progress" document to use the latest revision

How do I get an 'in progress' document to use a new revision instead of the one it was started with? I am using DWF 3.0.1 and it has a number of binders 'in progress' using versions of processes that have been changed or updated since they started.
To have DWF use the latest revision of the Workflow object it needs to be "Published", at which point the old Workflow process will become a historical version and the new revision used within your applications.
