Fields on a subform behave pretty much identically to fields on the main form. When you edit a document, the fields in the main form are not stored in a different location than the fields on the subform -- they are all saved in the same document. So, you can just write a Querysave event (either in the form or in the subform) and refer to fields on the main form and fields on the subform in the same way, without worrying which are which.
I also considered that you might not be talking about subforms -- perhaps you're actually asking about response documents. If that's the case, please resubmit your question with additional details about how your data is organized and what you want to accomplish.
It sounds like you want to make an audit trail that shows who edited the main document and what fields they changed.
