There is no simple facility to check to see if a sys admin is looking at e-mail. But if you are concerned about a particular case, there is a place to look. On the Database Properties dialog, there is a button for "User Detail" on the Information tab (the one with the "i" on it). If you click the user detail button, it shows you every read, write and access on that database. It doesn't tell you what they were doing, or what they looked at, but it's a start. However, you should also note that agents signed by the admin or server will appear, and these are generally perfectly legitimate.
